Introduction: Paneer Malai Kofta is a rich and indulgent vegetarian dish that has its roots in the culinary traditions of the Indian subcontinent. The word “kofta” is derived from the Persian word “kufta,” which means “beaten.” This refers to the process of forming the koftas, or dumplings, which are typically made from a mixture of ground meat. However, in the vegetarian version, paneer (Indian cottage cheese) is used as the primary ingredient, resulting in a creamy and flavorful delight.
Ingredients:
For the Kofta:
• 250g paneer, grated
• 1 large potato, boiled and mashed
• 1/4 cup all-purpose flour
• 1 teaspoon garam masala powder
• 1/2 teaspoon red chili powder
• 1/4 teaspoon turmeric powder
• Salt to taste
• Purti Sunlife Refined Sunflower Oil for frying
For the Gravy:
• 2 tablespoons Purti Sunlife Refined Sunflower Oil
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1-inch piece ginger, grated
• 1 green chili, slit
• 1 cup tomato puree
• 1/2 cup cashew nuts, soaked and ground
• 1 teaspoon garam masala powder
• 1/2 teaspoon red chili powder
• 1/4 teaspoon turmeric powder
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• Salt to taste
• 1 cup heavy cream
•1 cup water
Instructions:
• Prepare the Kofta:
• In a large bowl, combine the grated paneer, mashed potato, flour, garam masala, red chili powder, turmeric powder, and salt.
• Knead the mixture until it forms a smooth dough.
• Divide the dough into small balls and shape them into koftas.
• Heat Purti Sunlife Refined Sunflower Oil in a deep pan and fry the koftas until golden brown. Drain on paper towels.
• Prepare the Gravy:
• Heat Purti Sunlife Refined Sunflower Oil in a pan & add the onion, garlic, and ginger. Sauté until fragrant.
• Add the green chili and tomato puree. Cook until the oil separates.
• Add the ground cashews, garam masala, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Stir well.
• Add the heavy cream & water. Bring to a boil, then reduce heat & simmer for 10-15 minutes, or until the gravy thickens.
• Assemble the Dish:
• Add the fried koftas to the gravy and simmer for a few more minutes, until the koftas are well coated with the gravy.
• Serve:
• Serve hot with naan, roti, or rice.
