Introduction:

Nankhatai cookies are a beloved Indian delicacy, known for their melt-in-your-mouth texture and delicate flavor. These shortbread-like cookies are traditionally made with semolina (sooji), flour, ghee, and sugar, often flavored with cardamom. Nankhatai are popular during festive seasons like Diwali and Eid, but they are enjoyed year-round as a delightful treat.

Ingredients:

•   1 cup semolina (sooji)

•   1/2 cup all-purpose flour

•   1/2 cup powdered sugar

•   1/4 cup Purti Vanaspati, melted

•   1/4 cup milk

•   1/4 teaspoon cardamom powder

•   Pinch of salt

Instructions:

Step 1 : Combine Dry Ingredients In a large bowl, whisk together semolina, flour, powdered sugar, cardamom powder & salt.

Step 2 :  Add Wet Ingredients Gradually add melted Purti Vanaspati & milk to the dry ingredients, mixing well until a soft dough forms. Avoid overmixing.
Step 3 : Shape the Cookies Take small portions of the dough and shape them into small balls. Flatten slightly with your palm.
Step 4 : Bake Arrange the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 12-15 minutes, or until lightly golden brown.
Step 5 : Cool and Serve Let the cookies cool on a wire rack before dusting them with powdered sugar. Serve & enjoy.
