Ingredients:

  • – 500g boneless chicken, cut into medium-sized pieces
  • – 2 medium onions, finely chopped
  • – 2 tomatoes, finely chopped
  • – 2-3 dried red chilies, broken into pieces (or 1-2 tbsp chili powder, adjust to taste)
  • – 1 inch ginger, grated
  • – 4 cloves garlic, minced
  • – 1 tbsp coriander powder
  • – 1 tsp cumin powder
  • – 1/2 tsp turmeric powder
  • – 1 tsp mustard seeds.
  • – 10-12 curry leaves
  • – 2 tbsp Purti Soyalite Refined Soyabean Oil
  • – Salt to taste
  • – Fresh coriander leaves for garnish

Instructions:

  • 1. Prepare the Aromatics: Heat Purti Soyalite Refined Soyabean Oil in a heavy-bottomed pan or Dutch oven. Add mustard seeds, when they start to splutter, add curry leaves and dried red chilies. Fry for a few seconds.
  • 2. Sauté Onions and Ginger-Garlic: Add the chopped onions and sauté until golden brown. Then, add the grated ginger and minced garlic, and cook until fragrant.
  • 3. Add Tomatoes and Spices: Add the chopped tomatoes and cook until they soften and release their juices. Add the coriander powder, cumin powder, and turmeric powder. Mix well and cook for a minute.
  • 4. Cook the Chicken: Add the chicken pieces and mix well, ensuring they are coated with the spice mixture. Cook for a few minutes until the chicken is lightly browned.
  • 5. Simmer the Curry: Add salt to taste and enough water to cover the chicken. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
  • 6. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice, naan, or roti.
