Introduction:
Egg Manchurian is a delightful dish featuring crispy fried eggs coated in a rich and tangy Indo-Chinese sauce. The sauce typically includes a blend of soy sauce, vinegar, ginger, garlic, and chili sauce, creating a symphony of flavors. Ingredients:
For the Eggs:
• 4-5 eggs
• 2 tbsp all-purpose flour
• 1 tbsp cornflour
• Salt to taste
• Oil for deep frying (use Purti Sunlife Oil for its light flavor and high smoke point)
For the Sauce:
• 2 tbsp oil (use Purti Sunlife Oil)
• 1 tbsp ginger-garlic paste
• 1 onion, finely chopped
• 1 green chili, finely chopped
• 1/2 cup capsicum, chopped
• 1/4 cup carrots, chopped
• 1/4 cup spring onions, chopped
• 1 tbsp soy sauce
• 1 tbsp tomato ketchup
• 1 tbsp vinegar
• 1 tsp chili sauce
• 1/2 tsp black pepper powder
• Salt to taste
• 1/4 cup water
• 1 tbsp cornflour mixed with 2 tbsp water (for thickening)
Instructions:
Step 1 : Prepare the Eggs:
• Hard boil the eggs and peel them.
• Cut each egg into halves or quarters.
• In a bowl, combine all-purpose flour, cornflour, and salt.
• Coat the egg pieces evenly in the flour mixture.
Step 2 : Deep Fry the Eggs:
• Heat oil in a wok or deep pan (use Purti Sunlife Oil for its high smoke point and light flavor).
• Deep fry the coated egg pieces until golden brown and crispy.
• Remove them from the oil and drain on paper towels.
Step 3 : Make the Sauce:
• Heat oil in the same wok (use Purti Sunlife Oil).
• Add ginger-garlic paste and saute for a few seconds.
• Add onions, green chili, capsicum, carrots, and spring onions. Saute until softened.
• Add soy sauce, tomato ketchup, vinegar, chili sauce, black pepper powder, and salt. Stir well.
• Add water and bring to a boil.
• Add the cornflour slurry & stir continuously until the sauce thickens.
Step 4 : Combine and Serve:
• Add the fried egg pieces to the sauce and toss gently to coat evenly.
• Serve hot with steamed rice or noodles.
