Khajur roll with purti vanaspati

Introduction: Khajur Roll, a quintessential Indian sweet, is a delightful fusion of dates and nuts. This delectable dessert has been a winter favorite for generations, offering warmth and comfort during the chilly months. Its rich, indulgent flavor and chewy texture make it a perfect treat to savor with a cup of hot chai.

Ingredients:
½ cup almonds, chopped
½ cup cashews, chopped
¼ cup walnuts, chopped
3 tbsp pumpkin seeds
3 tbsp pistachios, chopped
2 tbsp sunflower seeds
Other Ingredients:
250 grams pitted dates
2 tablespoons Purti Vanaspati
1 teaspoon cardamom powder
A pinch of saffron (optional)

Instructions:

Prepare the Dates:
Heat a pan over medium heat.
Add the pitted dates and roast them for a few minutes until they become soft and slightly caramelized.
Transfer the roasted dates to a blender and blend them into a smooth paste.
Roast the Nuts:
Heat a pan over medium heat.
Add the mixed nuts and roast them until they become golden brown and fragrant.
Remove from heat and let them cool.
Combine Ingredients:
In a large bowl, combine the date paste, roasted nuts, Purti Vanaspati, cardamom powder, and saffron (if using). Mix well until all the ingredients are thoroughly combined.
Shape the Roll:
Spread a sheet of parchment paper on a clean surface.
Transfer the date-nut mixture onto the parchment paper and spread it evenly into a rectangular shape.
Gently roll the mixture into a log shape, using the parchment paper to help you.
Wrap the roll tightly in the parchment paper and refrigerate for at least 2 hours, or until it becomes firm.
Slice and Serve:
Once the roll is firm, unwrap it and slice it into thin pieces.
Serve the Khajur Roll chilled or at room temperature.
