The recipe is also easy to adapt. You can choose different nuts for texture, adjust the sweetness according to preference or leave out the optional melon seeds.

For a festive presentation, arrange the ladoos on a traditional serving plate and garnish them with small pieces of pistachio or almond.

Ingredients

For the Besan Ladoo

  • 2 cups besan (gram flour) – approximately 200 g
  • ½ cup Purti Vanaspati – approximately 100 g
  • ¾ cup powdered sugar – approximately 90–100 g
  • ½ teaspoon cardamom powder
  • 2 tablespoons finely chopped almonds
  • 1 tablespoon finely chopped pistachios
  • 1 tablespoon melon seeds (magaz) – optional

For Garnishing

  • Chopped pistachios
  • Almond slivers

Recipe note: The quantity of powdered sugar can be adjusted slightly according to your preferred level of sweetness.

How to Make Besan Ladoo

1. Melt the Purti Vanaspati

Place a heavy-bottomed kadai over low to medium heat.

Add the Purti Vanaspati and allow it to melt gently. Avoid heating it on high heat.

2. Roast the Besan

Add the besan to the melted fat and mix thoroughly.

Continue cooking over low to medium heat, stirring regularly with a spatula. Scrape the bottom and sides of the kadai as you stir so the flour cooks evenly.

Roast for approximately 15–20 minutes, depending on the quantity, pan and heat level.

The mixture should gradually become smoother and develop a pleasant roasted aroma. Its colour may deepen slightly as the besan cooks.

Do not increase the heat simply to shorten the cooking time. Besan can scorch at the bottom of the pan and affect the flavour of the finished ladoos.

3. Cool the Mixture Slightly

Once the besan is properly roasted, switch off the heat.

Transfer the mixture to a wide bowl and allow it to cool until it is warm rather than very hot.

This gives the mixture time to settle before the powdered sugar is incorporated.

4. Add Sugar, Cardamom and Nuts

Add the powdered sugar and cardamom powder to the warm besan mixture.

Mix thoroughly until the sugar is evenly distributed.

Add the chopped almonds, pistachios and melon seeds, if using. Keep a small quantity aside for garnishing.

5. Shape the Ladoos

Take a small portion of the mixture in your palm and gently press it together.

Roll it between your palms until it forms a smooth, round ladoo.

Continue with the remaining mixture.

Place the shaped ladoos on a clean plate and allow them to cool completely.

6. Garnish

Once shaped, press a little chopped pistachio or an almond sliver onto each ladoo.

Let the ladoos set completely before transferring them to a storage container.

Common Mistakes to Avoid

  • Besan Still Smells Raw

If the roasted mixture still has a noticeable raw flour aroma, it may need additional cooking. Continue roasting over controlled heat while stirring regularly.

  • Besan Is Becoming Too Dark

Reduce the heat if the mixture is darkening quickly. A heavy-bottomed pan and continuous stirring can help the flour cook more evenly.

  • The Mixture Feels Too Dry

Let the mixture rest briefly before making changes. If it remains difficult to bring together, check the consistency carefully rather than adding a large quantity of any ingredient at once.

  • Ladoos Crumble While Shaping

If the mixture does not hold together, work it gently between your palms while it is still warm. The consistency should be cohesive enough to form a ball without excessive pressure.

  • Sugar Is Not Mixing Evenly

Use finely powdered sugar and mix thoroughly through the warm besan mixture. Break up any visible lumps before adding it.

How to Store Besan Ladoo

  1. Allow the ladoos to cool completely before storing them.
  2. Transfer them to a clean, dry, airtight container and keep the container in a cool, dry place away from direct heat and moisture.
  3. For better eating quality, handle the ladoos with clean, dry hands or a clean, dry utensil.
  4. If you modify the recipe by adding ingredients with higher moisture content or ingredients that require refrigeration, the appropriate storage conditions may differ.
