Coconut Jaggery Fried Modak Recipe: Crispy & Festive

Festivals have a way of bringing everyone into the kitchen. The aroma of freshly prepared sweets, the sound of familiar conversations and the excitement of serving something homemade make celebrations feel even more special.

During Ganesh Chaturthi, modaks naturally take centre stage. While steamed modaks are a traditional favourite, fried modaks offer a different experience—a golden, crisp outer layer wrapped around a soft coconut and jaggery filling flavoured with cardamom.

This coconut jaggery fried modak recipe is simple enough to prepare at home and makes a lovely addition to a festive sweet platter. For frying, you can use Purti Sunlife Refined Sunflower Oil, while letting the coconut, jaggery and cardamom remain the main flavours of the recipe.

What Ingredients Do You Need for Coconut Jaggery Fried Modak?

For the outer covering

  • 1 cup all-purpose flour (maida)

  • 2 tbsp fine semolina (sooji/rava)

  • 2 tbsp ghee

  • A pinch of salt

  • Approximately ¼ cup water, or as required

For the coconut-jaggery filling

  • 1 cup freshly grated coconut

  • ¾ cup grated or finely chopped jaggery

  • 1 tbsp poppy seeds (khus khus), optional

  • ½ tsp cardamom powder

  • 1 tbsp chopped cashews

  • 1 tbsp chopped almonds

  • 1 tbsp raisins

  • 1 tsp ghee

For frying

  • Purti Sunlife Refined Sunflower Oil, as required

How Do You Make Coconut Jaggery Fried Modaks at Home?

1. Prepare the coconut-jaggery filling

Heat 1 teaspoon of ghee in a pan over low to medium heat. Add the grated coconut and cook for 2–3 minutes, stirring gently.

Add the jaggery and continue cooking until it melts and combines with the coconut. Keep stirring until the mixture becomes cohesive and most of the excess moisture has reduced.

Add cardamom powder, chopped cashews, almonds, raisins and poppy seeds if using. Mix everything together and switch off the heat.

Allow the filling to cool completely. A cooled filling is easier to handle while shaping the modaks.

2. Prepare the dough

Add maida, semolina and a pinch of salt to a mixing bowl. Add 2 tablespoons of ghee and rub it into the flour using your fingertips.

Gradually add water and knead until you have a smooth, firm dough. Add the water little by little rather than pouring it in all at once.

Cover the dough with a damp cloth and let it rest for around 15–20 minutes.

3. Shape the modaks

Divide the dough into 10–12 equal portions and roll each portion into a ball.

Take one ball and roll it into a small, thin round disc. Place a spoonful of the coconut-jaggery filling in the centre.

Bring the edges towards the centre, forming small pleats as you go. Pinch the top gently to seal the modak.

If traditional pleating is difficult, a modak mould can make shaping easier. Make sure the edges are properly sealed before frying.

4. How Do You Fry Modaks Until Golden and Crisp?

Heat Purti Sunlife Refined Sunflower Oil in a deep, heavy-bottomed pan over medium heat.

To check the oil temperature, drop a tiny piece of dough into the oil. It should rise gradually with gentle bubbling.

Carefully place 2–3 modaks into the oil, depending on the size of your pan. Avoid adding too many at once.

Fry over medium heat, turning them occasionally so that they cook evenly on all sides. Once they develop a golden exterior, remove them using a slotted spoon.

Place the fried modaks on a plate lined with kitchen paper and allow them to cool slightly before serving.

What Makes Coconut Jaggery Fried Modaks Special?

The appeal of these modaks comes from their contrasting textures and familiar festive flavours.

The fried covering develops a golden, crisp texture, while the coconut and jaggery filling remains soft and aromatic. Cardamom adds a warm fragrance, while chopped nuts and raisins bring additional texture to every bite.

The ingredients are also familiar to most Indian kitchens, making this a practical homemade sweet for festive occasions.

What Are the Best Tips for Making Coconut Jaggery Fried Modaks?

  • Keep the dough firm and smooth so it is easier to roll and shape.

  • Reduce excess moisture from the filling before using it.

  • Cool the filling completely before assembling the modaks.

  • Seal the edges properly so the filling stays inside during frying.

  • Fry at a steady medium temperature for an evenly golden exterior.

  • Avoid overcrowding the pan, as this can affect the frying temperature.

  • Fry in small batches when necessary.

  • Allow the modaks to cool slightly before serving.

Can You Prepare These Modaks in Advance?

Yes. The coconut-jaggery filling can be prepared ahead of time and stored in an airtight container in the refrigerator.

Before using it, allow the filling to come closer to room temperature so it is easier to work with.

The shaped modaks can also be kept covered for a short period before frying. Avoid leaving the prepared dough uncovered, as it can dry out and develop cracks.

For the best texture, fried modaks are ideally served after they have cooled slightly.

A Homemade Modak for Festive Moments

The best festive recipes are often the ones that invite everyone to participate. One person prepares the filling, another shapes the modaks and someone else waits patiently for the first batch to come out of the pan.

These coconut jaggery fried modaks bring that familiar feeling to the kitchen with simple ingredients and a traditional combination of coconut, jaggery and cardamom.

For frying, Purti Sunlife Refined Sunflower Oil can be used as specified in the recipe. The focus remains on the homemade modak itself—the golden exterior, fragrant filling and joy of preparing something special for the occasion.
