For the stuffing, the basic potato mixture is prepared in this recipe. But you can prepare it in different ways by adding the boiled vegetables (carrot, green peas, beans, etc.), grated paneer, grated cheese, etc. along with boiled potatoes. For serving 2 people you need 6 bread slices 3 medium potatoes boiled ¼th cup finely chopped coriander leaves 1 medium onion finely chopped 1-2 green chilli finely chopped ½ tsp red chilli powder 1 tsp coriander-cumin powder 1/2 tsp amchur powder Salt to taste and Purti Soyalite Refined Soyabean Oil for deep frying. Direction: Boil and mash potatoes. Add onion, coriander leaves, green chilli, red chilli powder, cumin-coriander powder and amchur powder. Add salt and mix well. Cut the sides of the bread slices. Take each slice and dip it in a big bowl of water for a second and remove quickly. Squeeze Excess water by gently pressing them between your palms. Take small portions of the stuffing mixture and wrap the roll uniformly from all directions. Heat oil and deep fry the pakoras until they are golden brown. Transfer the cooked pakoras on a plate over a paper towel. Serve them hot with tomato ketchup or green chutney.
