Farsi Puri: The Golden, Crispy Delight of Festive Snacking

As Dhanteras approaches, homes begin to glow with the promise of prosperity, new beginnings and festive indulgences. From preparing the puja thali to bringing home something precious, every little ritual adds to the charm of the occasion. And, of course, no Indian festival feels quite complete without something delicious being prepared in the kitchen.

Among the many traditional treats enjoyed during the festive season, Farsi Puri holds a special place. This Gujarati delicacy is known for its crisp, flaky texture, a hint of spice and that satisfying crunch in every bite. Made with simple ingredients like maida, semolina, cumin and black pepper, Farsi Puri is proof that sometimes, the simplest recipes create the most memorable festive moments.

And what gives these little puris their beautiful golden crunch? A generous dose of patience, the right blend of spices and Purti sunflower oil for that perfect deep-fried finish.

Here's how you can prepare Farsi Puri in your own kitchen.

What Ingredients Do You Need to Make Farsi Puri?

  • 1½ cups maida (plain white flour)

  • 3 tablespoons semolina (suji/rava)

  • 1 tablespoon whole black peppercorns

  • 3 tablespoons ghee or cooking oil for the dough

  • 1 teaspoon cumin seeds

  • Salt to taste

  • Water as required

  • Purti sunflower oil for deep-frying

How Do You Make Crispy Farsi Puri?

1. Bring the Ingredients Together

In a wide bowl, combine maida, semolina, cumin seeds, 3 tablespoons of cooking oil or ghee, and salt. Mix everything well with your hands until the ingredients are evenly combined.

2. Knead a Firm Dough

Gradually add water and knead into a stiff dough. The dough should be firmer than the dough used for parathas or masala puris. Cover it with a clean, damp muslin cloth and let it rest for 10–15 minutes.

3. Roll and Shape the Puris

Divide the dough into 2–3 portions and roll each into a long cylindrical shape. Cut into small, equal portions and shape them into balls.

Roll each ball into a small circle, approximately 3–4 inches in diameter and 3–4 mm thick. Place 2–3 whole black peppercorns on each puri and gently crush them with a pestle. Prick the surface with a fork or knife at 4–5 places to prevent the puris from puffing up while frying.

4. Fry Them to Golden Perfection with Purti

Heat Purti sunflower oil in a deep kadai over medium heat. Once the oil is ready, gently slide in the prepared puris, a few at a time.

Fry them until they turn light golden brown and crisp on both sides. Keep the heat moderate so the puris cook evenly and develop their characteristic crunch without browning too quickly.

Remove them carefully and place them on a plate lined with kitchen paper to drain excess oil. As they cool, they will turn slightly darker and become even crispier.

Repeat with the remaining puris.

5. Let the Festive Crunch Begin!

Allow the puris to cool completely before storing them in an airtight container. Serve them with sweet and sour mango pickle, or pair them with a steaming cup of tea or coffee.

And just like that, your homemade Farsi Puri is ready to make your Dhanteras celebrations a little more delicious!

What Are the Best Tips for Making Crispy Farsi Puri?

Knead a stiff dough: A firm dough helps the puris hold their shape and turn crisp after frying.

Don't skip the pricks: Pricking the surface helps prevent the puris from puffing up during frying.

Choose your spice level: If you prefer a milder peppery flavour, coarsely crush the peppercorns and mix them into the dough instead of placing whole peppercorns on top.

Fry patiently: Maintain a moderate heat to ensure the puris cook evenly and become crisp without burning.

Store them well: Cool the puris completely before transferring them to an airtight container to preserve their crunch.
