How Do You Make Crispy Leftover Rice Bites?
1. Start with Yesterday’s Rice
Take the leftover cooked rice and lightly mash it with the back of a spoon or your hands. You don't need a completely smooth mixture keeping a little texture makes the bites even more interesting.
Add the mashed potato, besan, rice flour, red chilli powder, roasted cumin powder, garam masala, chaat masala, coriander, lemon juice and salt.
Mix everything together until you get a firm mixture that holds its shape.
If the mixture feels too soft, add a little more rice flour.
2. Give the Leftovers a New Shape
Take small portions of the mixture and shape them into bite-sized balls.
Flatten them slightly between your palms to make little discs.
You can also make them into small oval nuggets if you want something more playful for serving.
The idea is simple: yesterday's rice should no longer look like yesterday's rice.
3. Bring in the Purti
Heat enough Purti edible oil in a deep pan or kadai over medium heat.
Once the oil is hot, carefully slide in the rice bites in small batches.
Fry them until they turn golden, crisp and beautifully crunchy on the outside.
The Purti oil is what gives these leftover rice bites their delicious fried finish, turning a humble bowl of rice into a proper snack.
Don't overcrowd the pan, as this can lower the temperature of the oil and affect the crispiness.
Once golden, remove the bites and place them on a plate lined with kitchen paper.
4. Make a Quick Festive Dip
While the bites are frying, whisk together thick curd, coriander, roasted cumin powder, chaat masala, lemon juice, salt and a pinch of red chilli powder.
That's it.
No complicated chutney, no long preparation, just a cool, tangy dip to balance the hot, crispy bites.
5. Finish With a Little Festive Flair
Arrange the crispy rice bites on a serving platter.
Sprinkle a little chaat masala and roasted cumin powder over the top. Finish with fresh coriander.
Serve hot with the chilled curd dip.
And just like that, leftover rice has gone from yesterday's side dish to today's star snack.
What Are the Best Tips for Making Crispy Leftover Rice Bites?
Use cold leftover rice
Rice that has been refrigerated overnight works especially well because it is less moist and easier to shape.
Don't make the mixture too wet
The rice and potato already contain moisture. Add water only if absolutely necessary.
Keep the bites small
Smaller bites cook more evenly and become crispier on the outside.
Fry in batches
Give each bite enough space in the pan so the oil temperature stays steady and the exterior becomes properly crisp.
Want them extra crunchy?
Add a little extra rice flour to the mixture. It helps create a crispier outer layer when fried.
Yesterday's Rice. Today's Crunch.
The best part about festive food is that the celebration doesn't have to end when the guests leave.
Sometimes, the leftovers are simply waiting for their second act.
So the next time you open the fridge and find yesterday's rice staring back at you, don't just reheat it.
Put it in the Festive Leftover Lab.
Because the celebration ended.
